Yes! You are correct in saying that there are jumper changes necessary to change from I2C to SPI and vice versa, when using the evaluation board. Anyways, when you wish to change the communication port from I2C to SPI and vice versa, you will have to reset the IC (from software perspective). Refer Serial Interface Choice section - Page 68 of Rev.H datasheet, to learn more about the serial port change. So, it is uncommon for a user to want to change from I2C to SPI or from SPI to I2C on the fly. Having said that, HSDC to I2C selection and vice versa is controlled by a single bit and that transition is seamless and that doesn't require any hardware changes.
If you click on "All Registers Access" submenu on the front panel of the evaluation software in PSM0 mode, all register values can be read or written, including the waveform registers. This can be accessed via either of the two modes: I2C and SPI modes.
